About Our Aging Process

Wet-Aged Beef
Our wet-aged beef is carefully aged in a vacuum-sealed environment where natural enzymes gently tenderize the meat while preserving moisture. The result is a steak with a clean, juicy flavor and a tender texture that highlights the natural qualities of the beef.

Dry-Aged Beef
Our dry-aged beef begins with a minimum of 30 days of wet aging, followed by a dry-aging period in our world-class dry-aging facility. During this process, moisture slowly evaporates while flavors concentrate, creating a rich, complex taste that steak enthusiasts love.

All steaks are hand-carved by our expert butchers, vacuum-sealed in high-quality barrier film, and frozen to preserve freshness.

"The best steaks for us!"

Brenda S.

Circle M Meats has changed the dynamics of our dinners! Any time we’re craving a great steak, they’re very helpful in choosing the best steaks for us!

"We eat a lot of beef!"

Clint C.

At Case Farms we know cattle and we know beef! We eat a lot of it and I have beef processed every year for myself and family. But one thing is missing – the flavor of a Circle M steak. I can’t find anywhere that has the capability to dry age my steaks. Side-by-side it’s just as tender and more flavorful than I can get anywhere. It’s better. That’s all there is to it.

"Easily the best steaks I’ve ever had!"

Lance M.

Easily the best steaks I’ve ever had! The time and effort they put into their aging process shows in the quality and flavor of every steak I’ve tried. My family won’t be buying steaks anywhere else but Circle M Meats!

"These Strip Steaks easily serve two each!"

Frankenfencer

Whether you call it a NY Strip or a KC strip, Circle M strip dry aged steaks are seriously tender and juicy and grill perfectly. These KC Strips are large enough to serve two people per steak when making a steak salad.

" I love these strip steaks!"

Bonnie F.

There is simply no comparison for tenderness and flavor. I look forward to my box arriving every time from Circle M Meats.

"The wet aged brisket was a major hit!"

Franz S.

We smoked a whole wet aged brisket from Circle M Meats. Everyone commented on the flavor and tenderness. The neighbors are already asking when we are smoking the next one.

“These are the best Tri-Tips I’ve ever had..”

Ben S.

People will say, “these are the best Tri-Tips I’ve ever had..” but they really are. Super tender, lots of flavor, and nearly impossible to mess up on the smoker! Glad I found Circle M Meats!

"Wow. (Maybe I should be more specific...)"

David L.

The family at Circle M is a real pleasure to work with. The steaks are consistently tender and packed full of flavor. I can’t find dry aged steaks like this anywhere else!

"We feature Circle M Meat's Dry Aged Steaks at our restaurant"

Chef Daniel

I grilled a steak over hot hard wood charcoal and topped it with a simple herb shallot butter. The deep rich nutty flavor was excellent! If you are looking for a special steak, I highly recommend that you give Circle M Meats a try.

"These are large filets!!!"

Ann S.

After this, other filets just look a little sad. Circle M Meats dry aged filets are so tender and taste great.

Frequently Asked Questions

You’ve got questions, we’ve got answers.

At Circle M Meats, we understand that you may have some questions about our company and our products. We hope that the following FAQ information will answer any questions you may have.

How does the Flat Rate Shipping work?

What is flat rate shipping?

Flat rate shipping means your shipping cost is set by your location — not by how much you order or how heavy your box is. Once you know your zone, you know your shipping cost upfront.

Why does Circle M Meats use shipping zones?

We ship frozen, premium-quality meats that require insulated packaging and reliable cold-chain delivery. Shipping zones allow us to keep pricing fair, transparent, and consistent based on distance and carrier costs — without compromising quality or care.

Where is flat rate shipping available?

Flat rate shipping is available throughout the continental 48 states.

How are shipping rates determined?

Rates are based on regional zones that reflect distance, transit time, and carrier costs. This approach allows us to offer predictable pricing while ensuring your order arrives safely and properly frozen.

Does ordering more increase my shipping cost?

No. As long as your order ships in one standard package, your flat rate shipping cost remains the same — making it ideal for stocking up or ordering larger cuts.

Will my meat still arrive frozen?

Yes, or still cold to the touch. Every order is packed with insulated materials and cold packs to maintain proper temperature throughout transit, just as it always has been.

When will I see my shipping cost?

Your flat rate shipping cost is automatically calculated at checkout based on your delivery address — no surprises.
Do you ship outside of Missouri? How often?
How will my order be packed?
What is sous vide–rated barrier film?

Sous vide–rated barrier film is a heavy-duty, food-safe vacuum-seal packaging designed to lock out air and protect freshness. It creates a strong seal that prevents freezer burn, preserves flavor, and extends shelf life. This type of packaging is also safe for gentle water-bath cooking, though many customers simply appreciate that it keeps their meat clean, protected, and tasting its best from our facility to their kitchen.

Why “Free Shipping” on Bulk Beef Isn’t Really Free

Shipping perishable, heavy items like bulk beef is expensive—and “free shipping” often just means those costs are built into a higher price per pound. Many suppliers raise their prices to cover insulated packaging, dry ice, and expedited freight, so customers end up paying for shipping indirectly.

This practice can especially disadvantage local buyers who live close to the farm, since they pay the same inflated rate as someone across the country.

At Circle M Meats, we believe in transparent pricing with no uplift or hidden fees. Shipping is calculated based on your location and order size, so you know exactly what you’re paying for: premium beef, fair value, and responsible handling from our farm to your freezer.
