Our filets are wet aged for a minimum of 30 days followed by a 10 day dry aging period in our world class dry aging facility.

Each filet is expertly trimmed, and hand carved by our expert butchers. Filets are sealed in pairs in our sous vide rated barrier film and frozen – guaranteeing freshness and extending shelf life.
