8-ounce Circle M Meats Ultimate Ground Beef patty
Kosher salt
Fresh cracked black pepper
White sharp cheddar cheese
Bourbon onion jam
Thick-cut applewood smoked bacon

Form an 8-ounce patty using Ultimate Ground Beef.
Season generously on both sides with kosher salt and fresh cracked black pepper just before placing it on a hot grill.
Grill over medium-high heat until your preferred doneness, flipping only once. During the final minute of cooking, place the sharp white cheddar on top and allow it to melt.
Lightly butter the brioche bun and toast until golden.

Ingredients
• 2 large yellow onions, thinly sliced
• 1 tablespoon butter
• 1 tablespoon olive oil
• 2 tablespoons bourbon
• 2 tablespoons brown sugar
• 1 tablespoon balsamic vinegar
• 1 teaspoon Worcestershire sauce
• Pinch of kosher salt
• Fresh cracked black pepper, to taste
Directions
Heat the butter and olive oil in a large skillet over medium heat. Add the onions and cook slowly, stirring occasionally, for 20–25 minutes until they're deeply caramelized and golden brown.
Carefully stir in the bourbon and let it simmer for 1–2 minutes to cook off the alcohol. Add the brown sugar, balsamic vinegar, Worcestershire sauce, salt, and pepper. Continue cooking for another 5–8 minutes, stirring occasionally, until the mixture thickens into a rich, jam-like consistency.
Remove from the heat and allow the onion jam to cool slightly before spooning it onto your burger.
Tip: Bourbon onion jam can be made a day or two ahead and stored in the refrigerator. Gently warm before serving for the best flavor.
