When it comes to grilled beef, sometimes the best finishing touch is also the simplest.
Chimichurri is a vibrant herb sauce that originates from Argentina and Uruguay, where it is traditionally served alongside grilled meats. Fresh herbs, garlic, olive oil, and vinegar come together to create a bright, flavorful sauce that complements the rich character of a perfectly grilled steak.
While chimichurri is most often paired with beef, its versatility makes it a welcome addition to many dishes. It can be used as a sauce, marinade, dip, or even drizzled over grilled vegetables.
The fresh herbs and acidity help balance the richness of grilled meats while adding layers of flavor without overpowering the natural taste of high-quality beef.

Ingredients
2 cloves garlic
1/2 onion
1/4 cup red wine vinegar
1 1/2 cup olive oil
1 tablespoon crushed red pepper
1 bunch fresh parsley
1 bunch fresh cilantro
1 bunch fresh oregano
Salt and pepper to taste
Finely dice the garlic, onion, parsley, cilantro, and oregano and add them to a large bowl.
Add the red wine vinegar and olive oil, then stir well to combine all ingredients.
Season with salt and pepper to taste.
Refrigerate the sauce for about one hour before serving to allow the flavors to combine.
Chimichurri is best when freshly made, but it can be stored in the refrigerator for 3–5 days.
Before serving, allow the sauce to come to room temperature so the olive oil loosens and the flavors fully open up.
