Grilling steak can sound like a risky move when you’re not exactly sure what we’re doing. We understand; it’s not uncommon to overcook meat when first learning how to use a grill. And that’s okay – mistakes are for learning, and practice makes perfect. But once you learn how to cook a steak to perfection on your grill, your friends and family will be begging you to grill one up for them, too.

Here’s how you can grill the perfect steak every time:

Step 1: Remove from Refrigerator

If you’ve ever tried to cook a steak that’s straight from the fridge, you know it can be a frustrating experience. The meat is tough and chewy, and it’s nearly impossible to get it to the perfect level of doneness. However, there’s a simple solution to this problem: remove your steak from the fridge 20-30 minutes before cooking. Allowing the steak to come to room temperature before grilling helps to tenderize the meat and results in a juicier, more flavorful steak. In addition, it’s easier to control the cooking process when the steak is at room temperature.

Step 2: Turn Your Grill Up to High Heat

If you’re using a gas or propane grill, then you’ll want to turn that baby all the way up to high. However, if you’re using a charcoal grill, then you’ll want to get your charcoal white hot and create a direct heat zone for your steak.

Step 3: Apply Oil

One way to ensure a perfectly grilled steak is to apply a thin layer of oil before cooking. This will help to prevent the steak from sticking to the grill, and it will also add a bit of flavor. When choosing an oil, go for something with a high smoke point, like canola, grape seed or avocado oil. Be sure to get the oil on all sides of the steak for the best results.

Step 4: Season the Steak

Any cook will tell you that seasoning your food is essential to creating a delicious dish. When it comes to grilling steak, salt and pepper are the perfect seasoning duo. Place the steaks on the grill, cooking for 4-5 minutes until slightly charred. Then, turn the steaks over and continue to cook for the follow times to achieve desired temperature:

  • 3-5 minutes for medium-rare (135 degrees F)
  • 5-7 minutes for medium (140 degrees F)
  • 8-10 minutes for medium-well (150 degrees F)

There’s no shame in using a meat thermometer! Keep in mind when you remove your steak from the grill the internal temperature will continue to rise, so cook it to a few degrees under your desired temperature.

Step 6: Rest

Once your steak has reached your desired temperature, it’s time to remove it from the grill, transfer it to a cutting board, and tent it loosely with foil. Let the steak rest for 5 minutes before slicing. Resting allows the juices to redistribute, ensuring that the steak is evenly cooked and juicy.
