Dry Aged Chili

*made with Circle M’s Dry Aged Beef Trim

Serves: 4 – 6

 

What happens to all of the trim from our hand carved steaks? We package it! It can be used in a variety of recipes and our favorite is our delicious chili recipe. Substituting bland ground beef with our flavorful dry aged beef trim is what takes this recipe to the next level. Hearty, rich and packed to the brim with flavor, our chili is easy to make and the perfect recipe for your next gathering!

 

Ingredients:

1 lb Circle M Meats Dry Aged Beef Trim

3-4 cups water

1 tablespoon olive oil

1 medium yellow onion, diced

2 ½ tablespoons chili powder

2 tablespoons ground cumin

2 tablespoons granulated sugar

1 tablespoon garlic powder

1 ½ teaspoons Kosher salt

½ teaspoon ground black pepper

¼ teaspoon cayenne pepper

2 tablespoons tomato paste

1 ½ cups beef broth

1 (14.5 oz) can petite diced tomatoes

2 (15.5 oz) cans red kidney beans, drained and rinsed

1 (8 oz) can tomato sauce

*OPTIONAL for extra spice and smokiness: 2 chipotle peppers in adobo sauce, finely diced

 

Directions:

  1. Place beef trim in a bowl and cover with water. Cover and place in the fridge for at least 2 hours. Best results when left overnight.
  2. Drain beef trim and pat dry. Cut into bite size chunks.
  3. Place a large skillet over medium-high heat and add olive oil, diced onions and beef trim. Sauté until beef trim is browned and onions are softened (approximately 4 – 5 minutes), stirring occasionally.
  4. Add onions and beef trim to Crock-Pot along with remaining ingredients. Stir to combine.
  5. Cook on high for 3-4 hours or on low for 6-8 hours.
  6. Serve with your favorite chili toppings!

Shredded cheddar cheese

Sour cream

Avocado, diced

Green onions, diced

Fresh cilantro

Fresh lime juice
