After completing our 30-day wet-aging process, selected primal cuts are carefully transferred into our dry-aging rooms for an additional 21 days.


Inside these climate-controlled rooms, carefully managed temperature, humidity, and airflow slowly remove moisture from the meat while allowing naturally occurring enzymes to continue tenderizing the muscle fibers.


As moisture gradually evaporates, the beef's natural flavors become more concentrated, creating the bold, complex character that has made dry-aged steaks a favorite among steak enthusiasts.

The result is remarkable depth of flavor, buttery tenderness, and a richer, more robust steakhouse experience. Because some moisture has naturally evaporated, each ounce also contains a greater concentration of protein by weight.

One of the biggest misconceptions about dry-aged beef is that it must be dry to eat.


In reality, the opposite is true.


While dry aging naturally reduces the steak's water weight—typically between 5% and 15% depending on the aging period—the eating experience is remarkably juicy, tender, and luxurious. That's because the sensation of juiciness comes from much more than water alone.
