The richness of the beef is complemented by creamy blue cheese, balanced by the sweetness of balsamic caramelized onions and roasted red peppers. Fresh baby arugula adds a peppery finish while mayonnaise ties everything together with a smooth, creamy bite.
Ingredients (Makes 4 Burgers)
For the Burgers
• 2 pounds Circle M Meats Ultimate Ground Beef
• Salt and freshly ground black pepper
• 4 brioche burger buns, lightly toasted
Toppings
• 4 ounces blue cheese, crumbled
• 1 cup roasted red pepper strips, drained
• 2 cups baby arugula
• ¼ cup mayonnaise
Balsamic Caramelized Onions
• 2 large sweet onions, thinly sliced
• 2 tablespoons butter
• 1 tablespoon olive oil
• 1 tablespoon balsamic vinegar
• Salt and pepper to taste
Directions
1 Caramelize the Onions
Heat the butter and olive oil in a skillet over medium-low heat. Add the onions with a pinch of salt and cook slowly for 25–30 minutes, stirring occasionally, until deeply golden. Stir in the balsamic vinegar during the final minute of cooking.
2. Prepare the Burgers
Divide the Ultimate Ground Beef into four equal portions and gently form into patties about ¾-inch thick. Season both sides generously with salt and pepper.
3. Grill
Grill over medium-high heat for about 4–5 minutes per side, or until your preferred doneness. During the last minute of cooking, top each burger with crumbled blue cheese and allow it to soften and begin melting.
4. Toast the Buns
Lightly toast the brioche buns until golden.
5. Assemble
Spread mayonnaise on the toasted bun. Add the burger, followed by balsamic caramelized onions, roasted red peppers, and baby arugula. Finish with the top bun and serve immediately.
