Why Dry Aged?

Dry aging is a process that involves exposing cuts of beef to a controlled environment of temperature, humidity, and air circulation for an extended period. During this process, enzymes naturally present in the meat break down muscle tissue, resulting in a concentration of flavors and the development of a tender, rich texture. We age our steaks just the right amount of time for the ultimate taste and texture.

Dry aging intensifies the natural flavors of the meat, creating a depth and complexity that is unmatched by any other method. The enzymatic breakdown of muscle fibers during dry aging results in a more tender and succulent steak.


As moisture evaporates from the meat, the flavors become more concentrated, leading to a richer and more robust taste and a higher level of protein per ounce.


Dry-aged steaks not only offer exceptional flavor and tenderness, they provide numerous health benefits. Dry-aged steaks are naturally low in carbohydrates, making them suitable for high protein, low carb and keto diets.

    Where does your beef come from? When buying beef from the store, you have no idea what state or country your beef came from. You have no control how it was produced, how many times it has been unloaded and loaded on trucks or shipped out of distribution centers.

    Our Ranch-Raised beef benefits the environment. Your beef was raised by using well-managed sustainable programs and apply regenerative agricultural practices.

    • We use a waste-water management system restoring soil carbon and nitrogen. 


    • Sustainable ranching practices support a diverse ecosystem of plants and wildlife. Responsible ranching promotes grasslands to recover and regenerate. Thus, protecting watersheds and maintaining clean water.


    • We drastically reduce our carbon footprint by using upcycled products in our farming.

Our founder, Alex Mareth was born and raised in rural Missouri and comes from generations of farmers.  Alex holds an Animal Science B.S. with a minor in Agriculture Business from Missouri State University. During his university studies, he worked for the Vathauer’s feedyard and interned with Thomas Angus Ranch. After working with these companies, he wanted to bring best practices in the cattle industry back home to Southwest Missouri.


    Both of Alex’s grandfathers were rooted in agriculture. These individuals have instilled a love for agriculture in Alex and our extended family. They are the reason for what we do today. We broke ground in Washburn, Missouri March of 2018 to build what is now Circle M Cattle and Circle M Meats.

    At Circle M Meats, we understand that you may have some questions about our company and our products. We hope that the following FAQ information will answer any questions you may have.


    YES! We ship to all lower 48 states - and also have the availability to offer local pickup for our customers close to home (serving the Southwest Missouri/Northwest Arkansas area).

    We ship on Monday – Wednesday, every week! You can expect your order to arrive within 2-3 business days of shipment notification.

    Orders are shipped frozen and carefully packaged with ice packs, so food stays frozen throughout the shipping process. Even if your order should thaw during delivery, if it's still cold to the touch, it's absolutely fine to use and refreeze!

    You'll pay a 25% deposit upfront, based upon a 400 lbs. of packaged beef with the remaining balance due upon shipment. The final yield of packaged beef is substantially less than the live weight. Processing weight will vary and can run close to 500 lbs. but we want to keep your deposit low. 

    Our cattle are sustainably-raised, with plenty of room to roam. We supplement our feed with a Bovine salad of onion, mustard seed, rice and fescue to create incredible marbling throughout the meat and a one-of-a-kind flavor experience with every bite! If you know Missouri, you know that winter snows can come along anytime. Our cattle are not dependent upon foraging only. 

    We cannot accept cancellations for bulk beef, however, we will do our best to accommodate for individual product changes based on where the order is in the fulfillment process.
